Ingredients


  • baby potatoes :
    250 grams

  • garlic cloves, chopped :
    12 -

  • oil :
    1 tablespoon

  • cumin seeds :
    1 teaspoon

  • gram flour (besan) :
    3/4 cup

  • coriander powder :
    1 tablespoon

  • garam masala powder :
    1 teaspoon

  • red chili powder :
    1 tablespoon

  • turmeric powder :
    1/2 teaspoon

  • yogurt :
    1/2 cup

  • Salt, as per taste :
    -

  • fresh coriander, chopped (for garnish) :
    1 tablespoon

Steps


  • Step 1 :
    First, boil the potatoes, peel them, and set them aside.

  • Step 2 :
    Heat oil in a pan, add the potatoes, and cook until they turn golden brown. Remove and set them aside.

  • Step 3 :
    In the same pan, heat a little more oil. Add cumin seeds and let them splutter.

  • Step 4 :
    Once the cumin seeds crackle, add chopped garlic and sauté for 30-40 seconds.

  • Step 5 :
    Now, add gram flour (besan) and roast it on low heat for 5 minutes.

  • Step 6 :
    After 5 minutes, add coriander powder, garam masala powder, red chili powder, and turmeric powder. Sauté for 1 minute.

  • Step 7 :
    Turn off the heat, add yogurt and a little water, and mix well. Turn the heat back on and cook until the gravy thickens.

  • Step 8 :
    Once the gravy is thick, add the fried potatoes, salt, and mix well. Turn off the heat and serve.

  • Step 9 :
    Gujarati Lasaniya Batata is best served with Palak Dal, Lauki Raita, and Phulka for a delicious meal. Enjoy!
